Recipe of the Month- Salad w/Watermelon!

Watermelon Feta Salad




First off, who doesn't love watermelon on a summer's day? 

Also, aren't we all trying to add more salads to our plates and lives?

I tried this salad for the very first time earlier this year at a social gathering and wasn't sure what to expect. Let me tell y'all, it sure surprised me! I think the combination of sweet and savory flavors is what did it, making it a perfectly refreshing and super simple dish to make, enjoy, and share with your friends and family!

Ingredients:

  • 4 cups watermelon, cubed
  • 1 cup feta cheese, crumbled
  • 1 cup sliced red onions
  • 3 cups arugula
  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
Optional: Cucumbers 

Instructions:

Whisk olive oil, vinegar, and salt together in a large mixing bowl. Add tomatoes, arugula, and red onion; toss to coat. Gently stir in watermelon and feta cheese to serve. 

You truly can't go wrong with this salad!
