Rainbow Salad With Mixed Greens
Who doesn't love a simple, keto-friendly salad with peppers, cucumbers, and more? This is easy to prepare, and you'll be chowing down within a matter of minutes!

Ingredients:
1/2 napa cabbage
6 cups mixed greens
4 cups cherry tomatoes
2 cucumbers
2 yellow bell peppers
2 avocados
1 1/2 tbsp fresh dill
1 lemon
1/3 cup olive oil
1/4 cup balsamic vinegar
3/4 tsp red pepper flakes
Instructions:
Core and thinly slice the cabbage. Add to a salad bowl along with mixed greens and cherry tomatoes.
Thinly slice cucumber. Remove top and seeds from yellow bell pepper; thinly slice. Peel and dice avocado. Combine all together in the bowl.
Coarsely chop dill. De-seed and juice lemon.
In a small bowl, whisk together olive oil, balsamic, red pepper flakes, dill and 2 tbsp lemon juice. Toss dressing with salad and enjoy!
