Monthly Recipe: Gochujang BBQ Ribs- Slow Cooked

It's officially rib season, y'all! 
And since I'm not proficient with grilling them YET, we're pulling out the slow cooker instead.

Enjoy this simple and delicious Korean-style recipe. The beef is marinated with a mix of soy sauce, ginger, garlic, apple cider vinegar and gochujang paste, then slow cooked on low. Using an air fryer (or oven) afterwards to broil is an extra touch to caramelize the sauce. 

Add a side dish and veggies for a perfect weeknight or weekend dinner! 


INGREDIENTS: SHORT RIBS

  • 3 to 4 pounds of beef short ribs
  • 1/2 cup light brown sugar (or honey)
  • 1/2 cup soy sauce
  • 6 green onions sliced
  • 2 cloves garlic, grated
  • 2 teaspoon grated ginger root
  • 2 tablespoons gochujang paste
  • 1 teaspoon red chili pepper flakes
  • 1 teaspoon black pepper
  • 1/4 cup water
  • 1/2 cup apple cider vinegar


Gochujang BBQ Sauce:

  • 1/2 cup gochujang paste
  • 1/2 cut ketchup
  • 1/2 cup honey
  • 1/2 cup brown sugar
  • 2 tbsp soy sauce

Garnish:

  • 2 green onions thinly sliced
  • 4 tsp toasted sesame seeds


DIRECTIONS

Optional: Brown short ribs in a skillet or under the broiler to give them some color and depth of flavor.

  1. Place short ribs on a shallow plate. Combine brown sugar, soy sauce, apple cider vinegar, ginger, garlic, gochujang, pepper, and water in a small bowl. Pour over the short ribs and allow to marinate for 30 minutes to 3 hours.
  2. Transfer the marinated beef short ribs to the slow cooker, add 1 cup of water or beef broth, cover the lid, and cook on low for 7 to 9 hours, turning once halfway through to ensure all sides of the ribs soak up the sauce. 
  3. Use tongs to remove ribs from pot; drain liquid (or save for gochujang sauces)

Now, the Sauce!

  1. Whisk gochujang, ketchup, honey, brown sugar, and soy sauce until blended and sugar is dissolved. Brush sauce over ribs.
  2.  Use air fryer to broil at 400 degrees for 10-15 mins or until ribs are heated through and sauce starts to caramelize.
  3. Sprinkle with green onions and add sesame seeds before serving.

Note: Slow cooker cooking times can vary depending on your brand.

** If you want to cook the short ribs in a Dutch oven, add an additional cup of water to the sauce and bake, covered, in a 300°F (150ยบC) oven for 3 to 4 hours or until the ribs are tender.

I've made these ribs several times and each batch is better than the one before. Adjust spices as needed to find what best fits your palate.
